Santa's New Favorite Oatmeal Cookie Recipe

This is from Tosca Reno's Clean Eat Diet book. It's a little high in calories, but when looking for a good cookie, you can't go wrong!
2 2/3 cups unsalted margarine
2 cups brown sugar
3 large eggs - organic
3 Tbsp. honey
1 Tbsp. vanilla
1 1/2 tsp sea salt
3 pounds - 8 cups old fashioned oats
4 cups unbleached all purpose flour
8 oz. dark raisins
8 oz. chopped walnuts

Preheat oven to 350. Line baking sheet with parchment paper. Cream the margarine, sugar, and eggs together in a large bowl until smooth. Beat in the eggs, honey and vanilla. Add sea salt. Use a large wooden spatula or your clean hands to work in the flour and oats until well combined. Add raisins and walnuts if desired and mix until evenly distributed. Shape the dough into large three - inch balls and press into five or six inch flat cookies on backing sheet. Bake for 15 min. or until as brown as you desire. Cool on wire racks.

Per cookie: 380 calories, 4 g protein, 21 g fat, and 47 carbs.

I am a big fan of Tosca Reno and eating clean. This is a great recipe when you just need a healthy treat. I sometimes substitute dried cherries for the raisins and chopped almonds for the walnuts. They are delicious either way. Enjoy!

almost 3 cups of margarine and you are calling it eating clean? is this a joke???
